White Beans and Pine Nuts with Kale and Arugula Recipe

This high protein, high green kale and arugula salad is bursting with nutrients as well as protein. Greens are one of the most detoxifying, healing and rejuvenating foods to consume and arugula, aka rocket, and kale are a couple of the best ones with high levels of chlorophyll and abundant nutrients.
Arugula had a spicy peppery flavor that can be a little strong for some. However with this mixture of ingredients and the spice combo, the arugula flavor is mellowed out and quite delicious. It went over well with all! Kale also is a tougher one (literally) for many to enjoy in a salad or dish eaten raw. However, by processing it small, as in this recipe, it is super easy to consume and eat. I loved this combo. This is how it goes..
White Beans and Pine Nuts with Arugula and Kale Recipe
Ingredients
1 cup Kale – packed
1 cup Arugula – packed
1 can White beans, Great Northern or Navy beans
¼ cup Pine nuts
6 to 8 Basil leaves – or 1 Tbsp dried
1 Tbsp Lemon juice
1 Tbsp Olive oil
1 tsp Onion powder
½ tsp Chili powder
½ tsp Cumin
½ tsp Turmeric
½ tsp Garlic powder
Directions
Rinse beans and drain well. Wash and de-stem kale leaves and then process them in a food processor until in small pieces. Combine all ingredients in a bowl and stir to combine.

Process until it is in small uniform size pieces.
Rinse canned beans, or cook your own.
Put all of the ingredients in a bowl.
Stir well to combine.
