Vegetarian Fajitas with Refried Beans & Raw Chipotle Cream Sauce Recipes

Last Saturday at the Padmani Yoga Retreat held at the Lotus Heart Center we served vegetarian fajitas. These flavorful vegan fajitas always go over well at retreats. So I am going to share how to put together delicious Mexican fajitas and share recipes for the refried beans and an easy to make vegan chipotle ‘cream’ sauce.

Vegetarian Fajitas
Ingredients
4 large or 8 small Tortillas, or large Lettuce leaves
2 cups Refried Beans (see recipe below)
Pan fried Onions and Peppers (see below)
1 cup Guacamole
1 cup Salsa
½ cup or more Chipotle Sour Cream Sauce (see recipe below)
Shredded Lettuce
Mexican hot sauce, sliced jalapeno’s, salsa verde or other favorite toppings.
Directions
Layer the refried beans, pan fried veggies, guacamole, salsa and favorite toppings on a tortilla and then fold. Fold up the bottom first then sides in and enjoy!
Pan fried onions and peppers..
To make the pan fried vegetables: thinly slice the onions and sweet peppers. Then fry them in a pan with a little olive oil and season with oregano and cumin while frying.
Refried Beans
Ingredients
2 cups cooked Black Beans, or other type of beans
2/3 cup Vegetable broth
1 Tbsp Olive oil
½ Onion, just over a half cup
2 Garlic cloves
1 tsp Chili Powder, regular or Ancho or Chipotle Chili powder can be used as desired for flavor
1 tsp Onion powder
Directions
Heat pan and add olive oil and sauté the onions and garlic until soft. Add the beans, vegetable stock and spices and simmer over medium heat until beans soften and liquid is absorbed. Use a fork or masher to mash beans if they are harder and do not soften easily on their own. Cook until desired consistency is achieved. It should be thick enough to make a good filling for the fajitas.
The Chipotle ‘Cream’ Sauce also went well on the Black Bean Burgers served the next day.
Chipotle Sour Cream Sauce
Ingredients
1 cup Cashews
½ cup Water
¼ cup Olive oil
3 Tbsp Lemon juice
½ tsp Salt
2 tsp Chipotle Chili powder
Directions
Blend all ingredients in blender.
