This raw vegan chili recipe really rocks. It is one of my favorite meals and yes, chili can be made vegan, not to mention raw, just as successfully in my opinion as the classic cooked version. Its a matter of the right spices, getting a delicious flavor down as well as a nice thick hearty texture and consistency. And this recipe succeeds on both counts and is one of my very favorite raw meals. This has been a favorite for several years, and I feel it has been perfected to my liking and now can go down side by side with my grandmothers favorite cooked recipe for it, which is also delicious. But this one does have a huge advantage and that lies in its nutrition. The fresh vegetables all keeping their natural enzymes and nutrients intact can’t be beat to make us feel great and glow. The Best Raw Vegan Chili Recipe
Ingredients
4 large Tomatoes – chopped
½ Red Pepper – chopped
1 Celery stalk – chopped
1 Onion – chopped
1 Avocado
1 ½ cups Bean mix (lentils, peas, adzuki and garbanzo beans) – sprouted
2 Garlic cloves – minced
4 Mushrooms – chopped
4-5 flat leaf Parsley stalks – chopped
1 Tbsp Miso
2 tsp Chili powder
1 tsp Oregano
1 tsp Salt
½ tsp Basil
½ tsp Cumin
½ tsp Marjoram
¼ tsp Curry
¼ tsp Turmeric
Dash of Black Pepper and Cayenne
Directions
Wash and chop the vegetables. Then mix all of the ingredients, except the avocado, sprouted bean mix and one tomato, together in a bowl. Remove about 1/3 of the mixture to a blender or food processor and add half of the avocado and the set aside tomato and puree.
Pour pureed mixture back into bowl with the rest of chili and add the other half avocado, which has been chopped small along with the sprouted bean mix. Mix well with a spoon to combine and let sit together for a few hours to marinate and soften vegetables and for flavors to combine before serving.
This chili will keep well for several days in the fridge.
