Thai Marinated Broccoli Recipe

This is a favorite broccoli dish that I have made quite often. Although it is raw if it is left to sit for a few hours the broccoli will wilt a bit and this is one of those dishes that is actually better the next day. Whenever I make it I usually make lots and so can eat it over the next few days.
It is filled with nutritious ingredients, mostly broccoli but also has lots of cilantro, which is great for removing heavy metals and has unique health properties. If you are not a cilantro lover, no worries, the cilantro taste gets almost lost in the creamy flavorful dressing. Try this one. I think everyone who has tried it when I have made it has loved it, so it’s a good bet that you will too!
Thai Marinated Broccoli
Ingredients
1 head Broccoli – chopped
2 Green Onions – sliced
½ bunch Cilantro – chopped
Dressing:
1 heaping Tbsp Almond Butter
1 Tbsp Honey
½ Lemon – juiced
1” Ginger – peeled and minced
1-2 cloves Garlic – minced
1 Tbsp Tamari or Nama Shoyu
1 tsp Sambal Oelek – or some finely chopped Chilis or Cayenne to taste
Directions
Chop up broccoli, cilantro and green onions and place in a bowl and set aside.
Put all of the dressing ingredients in a blender and blend well. Pour dressing over vegetables and mix well. Let marinate for a few hours before serving.
Thai marinated broccoli will keep for several days refrigerated.
