Collard leaves make a great base for wraps. They are big and flexible, strong enough to hold lots of fillings together and do not have a strong taste. I would rather eat a big green leaf any day than a carb-loaded flour based tortilla. The nutrition skyrockets in comparison and after you try this you will see how delicious it is, as well as how clean and energetic you feel after eating it, as opposed to heavy and bloated. This is a favorite broccoli dish that I have made quite often. Although it is raw if it is left to sit for a few hours the broccoli will wilt a bit and this is one of those dishes that is actually better the next day. Kale chips are a great raw snack that are super healthy and yet give you that crunchy and salty snack-food feel and taste. This recipe for them has a thicker coating on the kale, made primarily with cashews and nutritional yeast which together give a really cheesy taste. This is a recipe I created years ago and it still has yet to be improved upon. It’s still a favorite and even if I create others (it’s nice for a change) I keep coming back to this one. I made this the day before yesterday and some skeptics around here were delightfully surprised. Well, I was delighted, especially when yesterday, a day after eating the soup I kep getting sporadic compliments on it. “That green soup was great” I kept hearing. This delicious colorful salad was one I ate a lot of when I first went raw. This salad keeps well for days in the refrigerator and so I would make large batches of it. It is still one of my favorites that I make often. I like it best when the ingredients are chopped quite small so they really soak up the dressing. If you want to eat a lot of raw foods or are planning on going raw it’s a good idea to get used to eating salads! I never used to like salads, and if I can become a salad person, anyone can.  Trust me, they grow on you!!  Now I almost always have a salad as a side dish, but also I often will make this big salad as a main dish – and this Big Bowl Salad is it, or the base for it. Sometimes I also will add nutmeat (recipe coming) or steamed vegetables to fill it out and warm it up, which is a nice change.
