Smoked Apple and Kale Salad Recipe
2014
This kale salad has been my favorite lately. I made it and we all loved it, and I I made it again the next night. That’s a sign of real love! The smoked paprika is not overpowering and combines well with the sweet apple. But it’s not only the taste that is fantastic in this salad, it has a great texture as well.
I shredded my kale in a food processor. It’s easy and I love that, but you can also just finely chop yours with a knife. Work with what you have. The kale chopped finely means it is already broken down and softens up quickly when mixed with the dressing.
I made a lot the second time and the salad stayed well in the fridge for a couple days. If you suspect that you may really like it, you may want to make extra too!
It’s incredibly easy to make and often I save my recipes that are easiest to make to share in my newsletter. But I posted another kale salad there recently, the Reggae Kale Salad, so I thought I really should share this kale salad with you here! Simple salads that taste great are just the best!
