This fabulous warming filling delicious sweet potato tomato soup recipe is guaranteed to go over well! It’s called a Gypsy Soup because it’s one of those soups that you can switch up the vegetables to easily. It’s a great soup to make when you want to clean out your fridge and use up ends or extra vegetables you have. Perfect for just before a big grocery shop! This base gypsy soup recipe is almost exactly what we put in ours and it turned out fantastic! So you can follow this recpe generally as a guide or make it exactly the same.
Gypsy Sweet Potato Tomato Soup Recipe
Ingredients
16 Tomatoes – blanched, skins removed and diced, or 4 large cans of tomatoes
2 large Onions – chopped
5 Garlic cloves – minced
4 Celery stalks – sliced
8 small Zucchini – quartered lengthwise and sliced
4 Red Peppers – diced
3 Jalapenos – chopped small, remove seeds if you want less hot
4 Sweet Potatoes – peel and dice
large handful Parsley – destemed and chopped
2 tsp Turmeric
1 Tbsp smoked Paprika
1 Tbsp Basil
1 Tbsp Onion powder
3 Bay leaves
Salt
Directions
Chop onions, celery and garlic to pot with a little olive oil and saute. When onions are starting to soften add the rest of the vegetables. Then add the spices. Stir and simmer for about 45 minutes until the sweet potatoes are soft and then it is ready to serve. Easy, and delicious!

Add sweet potatoes, tomatoes and peppers. Any other vegetables you are adding can go in now.

I think the spices look so beautiful. Cooking feels to me like creating a work of art! ..and art that involves all the senses, especially smell and taste!
Stir and simmer for about 45 minutes until the sweet potatoes are soft and then it is ready to serve.
