Easy Delicious No Bake Key Lime Pie Recipe with a Macadamia Coconut Crust

This no bake key lime pie recipe is the last video to put up in my raw food recipes video series. Actually this post will have the last 2 videos, one for the pie and another showing how to make the crust, which is amazing! The filling for the pie is incredibly nutritious with an avocado base. The avocado gets completely hidden behind the lime and no one will detect it in there at all. All you notice is a heavenly creamy smooth base with great mouth feel, for the sweet lime flavor to slide over your taste buds on.
Sometimes we get so wrapped up in the more common flavors: vanilla and chocolate and even strawberry that a dessert that is ultra delicious, and a flavor we haven’t had much of, will transport us to an exotic land, and yet at the same time wake us up into really experiencing it in the now. You taste this and suddenly go ‘Oh wow Lime! Lime is amazing!!’ This pie recipe seems to do that more than any other, and so it is a great dessert to take to a pot luck. It is unique and memorable.
The Wonderful Macadamia Coconut Pie Crust
This raw pie crust is wonderful and quite amazing. It has only 3 ingredients. It is so easy, so nutritious and best of all it tastes great. I get asked about it incredulously by people eating it often. ‘How can it be?’ That a crust this healthy, and easy to make, can be so good? No grain, no baking, just process macadamias and coconut with a touch of agave and it holds together well. It is rich yet light and the tropical macadamia and coconut go so well with lime too.
I am happy to share this recipe with you. But I can’t share the pie; it’s gone. However, we have the recipe so we can make more! Yay!! Let’s start by making the crust recipe.
Macadamia Coconut Crust
Ingredients
1 ½ cups Macadamias (don’t soak)
1 cup dried shredded Coconut
1 Tbsp Agave, or Honey
Directions
Place all of the ingredients in a food processor and process until they are well broken down and start to clump together. Then transfer the mixture to a pie plate and press into bottom and along the edges. When it is formed set aside and get your filling ready to pour in.
Note: in the video below I used 1 cup of macadamia nuts. If you use either 1 cup or 1 and a half cups your crust is going to turn out great. I added extra nuts into mine this time because I am using a large pie plate.

Ingredients
1 Macadamia Coconut Crust
1 cup meat of Young Coconut
1 cup Cashews – soaked at least 1 hour prior, to soften, and drained
2 Avocados
3 Limes – Juiced
1 Tbsp Lime zest
½ cup Agave
2 Tbsp Psyllium
1 tsp Vanilla
Directions
Have your crust made and formed in a pie plate before processing the filling.
Process cashews and coconut together with just enough lime juice to blend well in food processor. Process until creamy. Add the rest of ingredients and process to combine well. Pour pie filling into crust and allow an hour or 2 to set before serving. Will keep for a week in the fridge.

Put the ingredients into the food processor.
Process until smooth. It looks a little bumpy but it was smooth like silk when we ate it.
Transfer filling to pie crust and smooth out top. Refrigerate to set for half an hour.
Transfer to a plate. I garnished with a mint leaf, just because I had them, but there is no mint in it. It was just pretty. Some reserved lime zest sprinkled on top would look nice as well!
Slice, serve and enjoy!
