Creamy Miso Noodle Soup Recipe

This soup recipe is for one of my favorite soups. Miso soup is a raw soup, but I usually heat it up in a pot on the stove, being very careful not to get it too hot. Which is a little tricky and requires that you watch it. My rule of thumb about heating raw soups is to use your own skin, or finger, as a guideline. If the water is too hot and will hurt you it will start destroying the valuable enzymes in food too. Also, miso is a fermented food filled with probiotics and so we really want to keep those alive, because they are so great for our own digestive systems.
This miso noodle soup is made with kelp noodles which I find a special parts of the recipe. When the miso noodles soften they get slippery, something like real noodles and have a great texture and mouth feel. Also, they are clear and just plain fun to eat, especially with chopsticks. That being said, if you do not have kelp noodles you can use spiralized zuchini noodles.

Creamy Miso Noodle Soup Recipe
Ingredients
1 pkg. Kelp Noodles or 2 c Zucchini – spiralized into noodles and chopped
2 cup Almond Milk (or 2 T Almond Butter and 2 c water)
3 Tbsp White Miso
1 tsp Nama Shoyu
1 tsp Agave
1 tsp Sesame Oil
1 tsp Sambal Oelek or 1 t fresh Chili
½” Ginger – chopped
1 Garlic clove – chopped
Cayenne to taste
3 cups Water
2 Green Onions – thinly sliced diagonally
2 Tbsp Red Pepper – finely chopped
Directions
If using kelp noodles, soften them first by soaking in hot water (up to 115 degrees) overnight or for a couple hours. Blend all ingredients except noodles, green onions and red pepper in a blender. Rinse kelp noodles well and drain. Place noodles, red pepper and green onion into warm soup broth and let sit at a warm temperature to continue to soften noodles and also the green onion and pepper for 20-30 minutes. Serve warm.

Assemble ingredients
Blend all of the ingredients except the noodles, red pepper and green onions. The put this in a pot with kelp noodles and warm.
Then add the peppers and green onions and serve when warm.
