Cold Asian Noodle Salad Recipe with Kelp Noodles

This Asian noodle salad recipe makes a great full meal salad. I loved it and this is now one of my favorite meals. I am soaking kelp noodles as I type to have it again. Kelp noodles are fun to eat. They claim to be raw and give a nice slippery texture close to traditional cooked noodles which is a nice change from zucchini or other root vegetable noodles, which are also great. But it is fun to change it up. The dressing is very rich and delicious.
The Dressing and about Sambal Oelek
I had left over Sesame Ginger Dressing that I made up when I made my Wilted Greens recipe. Here, it get transformed into a new dressing that is a little more like a sweet and spicy peanut sauce and it was delicious. For this I added a little almond butter, tamari and sambal oelek (hot sauce). I love sambal oelek! It is a staple in Malaysian and Thai cuisine and is just ground chilies. There is no garlic or other spices added. It is very simple, but delicious and adds a great flavor and heat. It is one of my favorite ingredients, but if you don’t have this you can add some ground chilies, hot pepper, red crushed chilies or your favorite hot sauce.
Like most salads, the vegetables are variable. Each time I make it I change the vegetables a little, according to what I have in my kitchen. How I made it first according to the directions below was so delicious, but use what you have. Get creative and have fun with the recipe. You may come up with a new creation. I love to experiment!
Cold Asian Noodle Salad Recipe
Ingredients
1 pkg Kelp Noodles – rinsed well and softened in hot water
3 stems Bok Choy, or Nappa Cabbage, Chinese Lettuce or other Asian Salad Greens – sliced
1 Carrot – shaved or grated
1 Celery stalk – sliced
¼ Red Pepper – diced
2 Green Onions – cut on diagonal
2 Tbsp Cilantro – stems removed and leaves chopped
¼ cup Cashews
Sesame seeds to garnish if desired
Dressing
3 Tbsp Sesame Ginger Dressing and see recipe below
1 Tbsp Almond Butter
1 tsp Tamari
½ tsp Sabbal Oelek
Soften kelp noodles while preparing vegetables. Mix or whisk the ingredients for dressing together well. Place all salad ingredients in a bowl. Pour the dressing over top and stir to combine. Serve and enjoy.
Sesame Ginger Dressing
Ingredients
¼ cup Olive Oil
2 Tbsp Sesame Oil
1 Lemon – juiced
1 Tbsp Honey
1 Tbsp Nama Shoyu
1” Ginger – grated
1 Garlic clove – minced
Dash of Cayenne
Directions
Whisk together in a bowl or blend together in a blender

Soak kelp noodles first for a few hours in hot water before making salad.
Make the dressing. Here are the ingredients, the Sesame Ginger Dressing was already pre made.
Mix it up.
Chop vegetables.
Add noodles, vegetables and dressing to bowl.
Mix it all up and add cashews. Garnish with sesame seeds if desired.
