Cauliflower Steaks with Apple, Almond and Dill

These cauliflower steaks were a real hit at dinner. In fact this was one of my favorite recipes from a recipe testing session I had recently. This is a raw food recipe and the cauliflower steaks were softened by dehydrating for three hours. This gives them a wonderful texture and even the cooked foodists among us loved them made this way. However, if you don’t have a dehydrator, they can be made by baking in the oven as well.
Cauliflower steaks are easy to make. Take a whole head of cauliflower and slice down the center and then cut parallel slices from the center at the widest part out towards the edge, cutting half inch steaks. I took lots of pics in the kitchen to show you exactly how to make these and will post them below.
Great for Entertaining
They are easy and fun to prepare, and these are a perfect dish if you are entertaining. The dehydrating time is very forgivable, and an extra hour will not hurt at all, or even two. I recommend at least three hours for them to get soft but extra time is fine. They can be in the background staying warm in the dehydrator while you socialize or put any other dishes together and they will be ready to serve when you are. They are delicious and beautiful as well and are destined to be a hit at any dinner.
Cauliflower Steaks with Apple and Dill
Ingredients
One small head Cauliflower – there will be some left over
1 Apple – peeled, cored and chopped
¼ cup sliced Almonds
¼ cup Red Onion – chopped
1 Tbsp fresh Dill – remove stems and chop up
1 Tbsp Olive oil
1 Tbsp Lemon juice
1 Tbsp Maple syrup
1 tsp Basil
1 tsp Onion powder
½ tsp Paprika
Directions
Slice cauliflower down the center of the head and then cut into half inch slices working out from the center. Try to cut as large steaks as you can from the cauliflower. Set sliced cauliflower aside and put any extra smaller pieces back into the fridge for use in another recipe.
Place chopped apple and the liquid ingredients, maple syrup, lemon juice and olive oil, in the food processor and process until the mixture turns into an apple sauce consistency. You may need to add a little water. I added about a tablespoon of water. When the apple is well processed, add all other ingredients to the processor except the cauliflower and sliced almonds and process very lightly so that all ingredients are combined but leaving little chunks and pieces of onion and dill in the mixture.
Transfer the processed mixture to a flat bottomed bowl or baking pan. Put the cauliflower slices in and press mixture into cauliflower leaving a layer on top. Arrange coated cauliflower steaks on a teflex sheet. When all cauliflower is coated, press in any remaining processed mixture onto the top of cauliflower steaks and then sprinkle sliced almonds on top and gently press in. Dehydrate for 3 to 4 hours until softened. Serve softened cauliflower steaks warm from dehydrator and enjoy!

Assemble ingredients
Slice cauliflower steaks. Slice down center of cauliflower and cut out into parallel slices from there.
Peel and core apples and chop up vegetables.
Place apples in processor and process.
Add liquid and scrape down side of processor. Process until apple sauce consistency.
Add the rest of ingredients, but not the cauliflower.
Process until well combined but leaving small pieces of onion and dill.
Put mixture in a flat bowl or baking dish with a flat enough surface to lay cauliflower steaks in flat.
Press in cauliflower steaks and scoop up mixture to press into top.
Arrange coated cauliflower steaks on teflex and when all of the mixture is used up, sprinkle sliced almonds evenly among the steaks and very lightly press in on top.
Dehydrate at least 3 hours and then they are ready to serve.
