Squash always reminds me of Thanksgiving and fall – harvest time. It’s real comfort food for me! ..and I am happy to celebrate Thanksgiving dinner with just this and a big leaf salad and whatever other vegetables happen to be around. It’s Thanksgiving weekend and that always makes me think of cranberries and so I am posting one of my favorite salads with cranberries! This corn chowder is vegan and made creamy with coconut milk, which has healthy fats your body utilizes well, and medium chain fatty acids which help to dissolve the bad fats in cells. Coconuts are very nutritious and so a great choice for making soups creamy. Corn is a food that although I love, I don’t eat very often as it is high in carbs and is often GMO. I usually only buy organic but we got a lot of fresh produce this week from a local farmer that was mostly, but not certified organic. At least no pesticides were used! || Read more

I think I had read so many places that people had tried and had a hard time doing it or finding a good recipe for one and I have been determined to do it. This butternut squash soup is thick, creamy and comforting. The coconut milk gives this soup its smooth creamy texture and is very nutritious with healthy fats. Coconut is known to have the medium chain fatty acids known to help dissolve and clean the bad fat from the body. Nutritious, comforting and delicious makes this soup a winner in my books!
