This quinoa cakes recipe came about from just seeing a title on a magazine. I googled the recipe when home, but the one I found had lots of ingredients I didn’t want. I was in a mood for something fried. It happens sometimes, not so often, but this presented a challenge, to combine really healthy ingredients, vegan and fried into something really delicious and as healthy as possible. The coconut lime salad dressing for this second Goddess bowl turned out amazing. We all loved it. It is sweet and nutty and perfectly accentuated the apples, pecans and dried cranberries in the Goddess bowl. It was a great combination. The tahini miso dressing recipe for this Goddess layered salad is a creamy smooth, ultra healthy salad dressing that goes with all combos of the Goddess Salad. For this first Goddess bowl, I chose a more savory version and topped it with olives and artichoke hearts. With it’s high protein base of quinoa topped with shredded kale, beets and all of the nutritious layers, this is one combination that may be hard to beat! Our celriac, leek and kale soup recipe this week features the cool and unusually ugly looking vegetable celriac and also leeks, which mom & I picked up at the market yesterday morning. Celriac is amazing in soups. It does not have a strong taste It is fairly mild and tastes somewhat like celery, but not as nearly as assertive, celriac is much more mellow. After you peel all the knobby parts off of it the inside has a texture much like a rutabaga or turnip and I think it is quite a nice change from that or potatoes in vegetable soup recipes. This soup also has kale as I am on a bit of a kale kick and trying to eat as much of it as I can.  It is quite an ecclectic spice mixture and I knew I was pushing it a little with my combination but I, and others, think it turned out to be quite fantastic.

This broccoli quinoa salad is one I created this afternoon. My mom is going to a pot luck tomorrow morning with a small group of painters and friends. I had just made a pot of quinoa, not knowing what I was going to do with it and I had an abundance of broccoli. That is sometimes how awesome recipes are born, and a few bowls later, I would say this is an awesome recipe. Oh and yes, 2013 really has been declared the International Year of Quinoa. So because of this and mainly due to the fact that it has a very high nutritional and protein content, let’s celebrate quinoa! As I love raw foods so much, I am very selective about which cooked foods I eat. Quinoa is one of them, and this quinoa salad recipe is delicious. Come see how it is made!  || Read more

Every weekend Mom and I make a big pot of soup together. It’s part of getting Mom back into and comfortable cooking and working in the kitchen again.. so it’s kind of a therapy thing. But cooking is a great bonding activity to do together so it is nourishing in different ways and has multiple benefits.  Mom sometimes tends to lean towards comfort foods these days and this is one of those recipes. I would have left out the potatoes and substituted other vegetables and you can do that if you like. That’s the beauty of soups, they are very adaptable.
