Cashew Cream Recipe with Berry Granola Parfaits

This cashew cream recipe makes a whipped thick sweet cream that is vegan and very versatile. Adding a little of this can make your raw desserts even more special. It makes a delectable topping for many desserts, can be used in a filling for a crepe-like raw wrap or in a parfait, as I made here recently. This cashew cream recipe is a great one to have in your repertoire as it is so quick and easy to make. It will enable you to whip up a delicious, luscious dessert with minimal time and effort.
We loved this dessert. If you don’t have granola on hand, another great idea is to blend half of the cashew cream with some extra berries and use that for your bottom layer. Cashew Cream Recipe
Ingredients
1 cup Cashews
3 Tbsp Lemon juice
4 Medjool dates – for a more white cream, use ¼ cup Agave
2 tsp Vanilla
¼ cup Water, or as much as necessary to allow blender to blend
Directions
Place all ingredients in a blender and blend well.
Makes 1 ¾ cups.
Berry Granola Parfaits with Cashew Cream
Ingredients
1 cup Granola
1 batch Cashew Cream Recipe (I used a little over 1 cup and had some left over)
1 cup Strawberries
12 Blackberries
¼ cup Raspberries
Directions
In the bottom of 4 parfait cups place ¼ cup of Granola in each of them. Then divide the cashew cream among the 4 cups. Next divide the blackberries and raspberries between them and finally chop the strawberries and divide them between the 4 cups. Now they are ready to serve!

Assemble ingredients
Soak cashews for at least 2 hours before using them, so they are soft and process into a smooth cream.
Drain cashews and add them, along with the rest of ingredients, to the blender jar and blend until smooth. Add just enough water as necessary for the blender to blend, so that the cashew cream is as thick and smooth as possible. It’s so easy to make!

Assemble ingredients: Berries, Cashew Cream and Granola.
Place granola in bottom of cups.
Spoon cashew cream in on top.
Spread the cashew cream out with the back of a spoon to the edge of cup.
Place the larger berries in on top first.
Then add the chopped up strawberries. You can also make another layer of each if desired, and with a taller cup.
That’s it, ready to serve!
