Broccoli Salad

This delicious colorful salad was one I ate a lot of when I first went raw. This salad keeps well for days in the refrigerator and so I would make large batches of it. It is still one of my favorites that I make often. I like it best when the ingredients are chopped quite small so they really soak up the dressing. It’s quite easy to make and I took lots of pictures to show you exactly how I make it.
Broccoli Salad
Ingredients
1 bunch Broccoli – chopped small
1 Carrot – grated
½ Red Pepper – chopped small
2 Celery Stalks – chopped small
3 Green Onions – chopped
½ c Parsley – chopped
Dressing:
1/3 c Olive Oil
¼ c Water
2 T Balsamic Vinegar
½ t Dijon Mustard
2 Garlic cloves- chopped
½ t Natural Herbal Seasoning blend (or mixed Herbs)
½ t Salt
dash Cayenne
Directions
Add all the dressing ingredients together in a bottle and shake well. Set aside while you make the salad. Prepare all of the salad ingredients and put them all into a bowl. Then pour the dressing on top and mix it all together well.

Mix the dressing ingredients first in a bottle, shake well and set aside.
I like to chop the broccoli starting at the top of the head and slice it from there towards the stem in half inch sections, then just chop the bigger pieces around the stem area afterwards.

Chop up the rest of vegetables and add to broccoli in a bowl.
Mix it all together well with the dressing and that’s it. Now you have a delicious Broccoli Salad!
