Spinach is considered one of the world’s most nutritionally rich and healthiest vegetables.
About – Spinach is an edible flowering plant that grows up to 30 cms. The main part that is consumed of the plant is its very nutritious deep green leaves, which are broad and larger at the base of the plant, with leaves becoming smaller higher up the stem. Spinach is usually an annual plant that very rarely survives the winter, except in the most temperate regions.
Nutrition – Spinach is highly nutritious and extremely high in antioxidants. It’s vitamins including most of the feel-good B vitamins, as well as vitamins A, C, E and K. It’s especially high level of folic acid (B9) is an integral and vital part of our cells. Spinach is mineral rich and contains lots of magnesium, manganese, iron, calcium, potassium, copper, phosphorous, zinc and selenium. On top of a vast array of vitamins and minerals, spinach has a concentrated amount of phytonutrients, with an abundance of carotenoids, such as beta carotene, lutein and zeaxanthan, and antioxidant rich flavonoids. Researchers have identified over a dozen different flavonoid compounds in spinach, which have high anti-inflammatory and anti-cancer properties. Spinach is also abundant in dietary fiber and has heart healthy EFA’s.
