Veggie Nori Rolls

Nori is one of the most nutritious foods around so I am always happy when I think of a new way to make it interesting and add to my diet. In this recipe veggies are mixed with an avocado and mayonnaise mix – of course, you know I’m using my hemp oil mayo! So it is super nutritious and loaded with healthy EFA’s. Getting healthy fats into your diet is great. They are not only beneficial to your health but they help clean out the bat fats from your cells and can actually help you lose weight. These veggie nori rolls are delicious and for health, it’s hard to beat a veggie/sea veggie combo like this!
Veggie Nori Rolls
Ingredients
4-6 cups of shredded and chopped veggies, I used:
1 Avocado
1 cup Hemp Oil Mayo, or less if desired and depending on how big avocado is
Lettuce
Sprouts
Nori Sheets
Description
Prep vegetables by washing and peeling if necessary and then shred them with a grater or in a food processor. Mash the avocado in a bowl and then mix with the mayonnaise. Mix this into the shredded vegetables then on a sheet of nori, spread out about a half cup of the veggie mixture on one end. Top with lettuce and sprouts and then roll up. Wet the end with a bit of water so it sticks down.
I like to cut them at a diagonal in the center and then pile them on a plate to serve.
Makes a lot.

Assemble ingredients.
