This Ginger Spiced Cauliflower Soup recipe was a favorite at the recent retreat I was creating food for. I want to share the whole menu plan for the retreat with you, and will soon, to give you lots of delicious meal ideas. I am happy to be home and looking forward to posting more, and sharing more of my favorite recipes from the retreat. I’m starting this off by sharing a favorite soup recipe.
This sophisticated yet warming and comforting soup is perfect for any dinner party or just to enjoy with family at home and is very easy to make. It’s light, yet hearty and has a really delicious flavor. Everyone loved it.

Ginger Spiced Cauliflower Soup Recipe
Ingredients
1 head Cauliflower – chopped
1 Shallot – chopped small
1 Tbsp Ginger – grated or minced
2 Garlic cloves – chopped or minced
1 Tbsp Olive oil
1 can Coconut milk
1 tsp Cumin
1 tsp Paprika or Smoked Paprika
1 tsp Onion Powder
½ t Nutmeg
½ t Turmeric
Salt, Pepper and Cayenne to taste
Directions
Saute the shallot, ginger and garlic in a little olive oil until soft. Add the cauliflower and spices and then just enough water to cover and boil until cauliflower is cooked and soft. Puree soup and then return to pot. Add the coconut milk and continue cooking on low heat for another 15 to 20 minutes to combine and then it is ready to serve.

Prep and chop the cauliflower, ginger, garlic and get all the ingredients together.
Saute shallot, garlic and ginger in a bit of olive oil until soft.
Add cauliflower and spices, cook until soft and then add the coconut milk and puree.
Let simmer for another 15 minutes and then it’s ready to serve.
