Mango Salad

Mango is one of my favorite fruits and so it makes sense that I would need to have a really good mango salad recipe. I do & I am happy to share it with you! This lively colourful salad is sweet and slightly spicy and sour. The flavors are balanced and combine into an overall delicious taste that wakens up the tastebuds as well as the eyes. It makes a great side dish or wonderful to eat just on it’s own!
Mango Salad
Ingredients
1 Green Mango
¼ cup Red Onion – thinly sliced in long strips
¼ Red Pepper – thinly sliced in long strips
3 Tbsp Cilantro – leaves slightly chopped
Dressing ingredients:
1 Lime – juiced
1 Tbsp Honey – Agave or other sweetener
1 Tbsp Olive oil
1 tsp Sambal Oelek or sprinkle some Crushed Red Pepper or other spicy seasoning, to taste
¼ tsp Salt, or to taste
Directions
Peel Mango and score half of mango with knife, then slice down to cut off julienned strips. Repeat on other side and until all of the fruit is cut away from the pit in long thin strips. Combine in a bowl with onion, red pepper and cilantro. Mix dressing in bowl and pour over salad. Mix well and serve.
