Easy Massaged Kale Salad Recipe

This easy massaged kale salad recipe simplifies the process of making it, so it’s a breeze to make and enjoy at home often. It does take a little time to massage the kale but other than that it is easy. This favorite salad is delicious and loaded with nutrients as kale is the most nutritionally rich vegetabe there is! The technique is easy and the basic recipe includes only 4 ingredients. Then you can add other favorite ingredients to change it up and create your own version of it with what you have at home.
The essentail ingredients to this kale salad are kale, lime (or lemon) and salt. The other ingredients are optional and you can change this salad to your preference and what you have in stock at home. I love avocado in this salad with it’s natural healthy fat. When I add avocado to it, I skip adding additional oil. However if you don’t have any avocado, add a little olive oil, or other favorite salad oil, as described below.
We made this twice while at the retreat. Here are both versions that we made.
Above, the massaged kale salad is topped with cucumbers, red peppers and sesame seeds.
Below, cucumbers, peppers and green onions are mixed in with the massaged kale. Then we laid a bed of crispy iceburg lettuce under it, mostly around the edges, set the kale salad in the center and topped with almond slices.
Massaged Kale Salad Recipe
Ingredients
1 bunch Kale
1 Lime – juiced, should be about 3 tablespoons
2 tsp Salt
1 Avocado
Favorite additons: Cucumber, Tomato, Red Pepper, Green or Red Onion, shredded Carrot, grated Beets,Pumpkin seeds, Sunflower seeds, Hemp seeds, chopped walnuts, sliced Almonds etc.
Description
Destem the kale and tear the leaves up into tiny pieces and place them in a big bowl. Drizzle the lime juice, or lemon juice over kale leaves and sprinkle on salt. Then the work begins to massage the leaves. With clean hands massage and massage and massage. Then let sit for awhile and the lime juice and salt will work to break down the tough fibers of the kale. After it sits for 20 minutes to half an hour, add the avocado, or 2 tablespoons of olive oil and other favorite salad ingredients. Toss and transfer to a serving plate to serve.

Drizzle lime or lemon juice on top and sprinkle salt. Then massage, working the lime juice and salt into the leaves. This is what will soften them.
Here we are preparing the bowls of salad. We topped the massaged kale with the other salad ingredients, but you can mix them in as well.
Ready to serve.
